1tbsp dijon mustard, 1 cup breadcrumbs, 1/3 cup grated mozzarella cheese, 1/3 cup grated cheddar cheese, 1/3 cup grated parmesan cheese, 2tbsp finely chopped parsley, 2 cloves crushed garlic, 2 tsp lemon pepper seasoning, 4 Snapper fillets, cooking oil spray.
Combine mustard, breadcrumbs, cheeses, parsley, garlic and seasoning in a large bowl.
Place fish on oven tray which has been covered with baking paper. Press cheese mixture onto the fish, coat with cooking oil spray.
Bake uncovered, in a hot oven for about 20 mins or until cheese browns and the fish is cooked through.
